Winter Sports

So with no fresh fruit handy and too much snow outside,what can I do? Well,  I still want the stove working,so I find something different to cook. Momma says delicacies, but I’m just playing with my food!
So far, Chicken enchiladas

and French toast with peaches and cinnamon sauce.

Brother[in-law Gene came over(40 miles!) and changed over mower to snow blade on tractor for me. I managed to plow out the drive yesterday ,good thing,we’ve had 2 deliveries and a meter reader come in today.
That little bit of work helped keep my glucometer reading below 150 for 2 days now. Is that the secret?Get off my butt? That’s too easy!  Well, I’ll try.

My only comment on these two dishes is yum.  I love the effort you are putting to the new dishes.  Using recipes as guidelines but expanding and changing ingredients makes for good eating!

Looks like you are keeping yerself busy, indoors and out!  The french toast with peaches looks good enuff to eat!

‘Tis a mighty fine bit of cooking Sir.  Maketh the mouth watereth!  Your were lucky that your kingdom receive-eth snow, my realm doth get dumpethed with icey bother!!  Glad to hear that thy blood sugar levels are in the proper range!!
